from the Wine to the Glass
Our Philosophy consists in accompanying fermentations but we minimize human intervention and prefer giving wine time.
That’s why hand harvesting in an important step. It causes minimal damage to the grapes, which are harvested when ripe and lets us check each bunch’s condition.
We chose a traditional winemaking method in concrete tank. The main advantage is that temperatures in concrete tanks are always the same, in spite of temperature variations outside. It also allows a soft extraction of tannins : constant temperatures and pumping-over are decided after tastings. Thanks to this method of wine-making, we can propose wines in which terroir and grape varieties can fully express themselves.
The maceration lasts from 10 days to 2 months, according to the grape variety and the vintage, and after the wine ages in vat for about 12 months.
